There is only one thing I love more than a soft, chewy, hot-out-of-the oven cookie; a soft chewy, hot-out-of-the-oven cookie with frosting. Except you’ve got to let it a cool a little before frosting it or else it will melt right off. I may or may not have spooned a glob of frosting and then taken a bite out of a hot cookie in the past, just to see what it’s like. As this may or may not have happened, I cannot definitively tell you that’s it’s one of the best friggin’ ideas I’ve ever had.
Cookies are my number one go to as far as quick and easy sweet treats to make at home. I always have everything I need and they bake really fast. Plus, I can freeze any extra dough I have to make cookies again another day. I’m very picky about buying cookies, as they have a tendency to be crunchy, which is perfect for some palettes, but not me. Great American cookie has extremely soft and chewy cookies, so they are a good fix for me! If the mood strikes me while I’m out, I might stop there for a cookie or three. If I’m feeling really crazy, I’ll go ahead and get a double doozie and get a nice sugar buzz off the massive amounts of frosting they sandwich between those bad boys.
I had some leftover cream cheese frosting from some cupcakes I made last week, and as I was trying to decide what to do with it I thought it would fun to make my own double doozies. Now, Great American Cookie definitely doesn’t use cream cheese frosting, but I really enjoyed pairing the cream cheese with a nice soft sugar cookie. So although this isn’t a copycat recipe for Great American Cookie, it’s a fun copycat idea. This would work well with your favorite cookie recipe and your favorite frosting. This is so easy to customize and is so fun for the kiddos too! I might have to come up with some more flavor combinations in the future.
