Y’all have my perfect pie crust recipe so I figured now y’all need a good pie to put in it! One of my all time favorite desserts is pecan pie and it just so happens to be just about the sugariest dessert on the planet. Big fat bummer…plus it will give me a big fat bum so I couldn’t even really make it before. On the rare occasion that we did have it, usually holidays, my husband couldn’t control his blood sugar since it was primarily simple sugars which are very unpredictable when it comes to taking insulin to adjust for the inevitable spike that all foods make to your glucose levels. (My husband is a type 1 diabetic, juvenile diabetes, which is very different from type 2 diabetes) Therefore, I just never made it because I didn’t want something in the house that was going to be difficult for him. Since he knew my love for pecan pies, he ended up getting a sugar free recipe from a guy at work and it is actually delicious! I was very skeptical when I first heard it as I always am when something is “sugar-free”, which in my book loosely translates to “not worth baking” but it tastes so much like the real thing! Izzy came up to me asking to bake something, as she does pretty much every day, and she wanted to make a pie. I hadn’t made this in a while so we whipped it up special just for daddy. She had so much fun making it! And I had fun eating it 😉
- 4 tbsp butter, melted
- 2 eggs
- 12 oz imitation honey
- 3/4 tsp vanilla
- 1 cup pecans, chopped
Preheat oven to 350° F.
Melt butter and add to a medium size mixing bowl. Then add eggs, honey, vanilla, and pecans to the butter. Mix together with a spatula and pour into a pre-baked pie crust. Bake for 45 minutes.
This recipe is ridiculously easy to do, especially if you bought a pie crust or had a homemade one in the freezer ready to go. I hope you try this out and I especially hope you like it! Have a wonderful weekend y’all!
