You ever heard the saying that bacon makes everything better? Maybe it’s not a saying, but it should be if it isn’t because it is completely true! It could just be a southern thing as well. Anyway, this is something my mom-in-law cooked for lunch the other day when the baby girl and I came over to do laundry and it was absolutely delicious. She and my mom both just look at what they have and make up recipes as they go, which is pretty cool in my book. I prefer to have everything planned with recipes and meal plans for the week which can make me somewhat limit my creative spontaneity in the kitchen. This was also a great stash buster meal since I used some frozen chicken breasts. You can find out about my stash buster grocery challenge in this post if you haven’t read it before. I recreated this dish the other night and it came out just as well, so I’m here to share it with you today.
5 Ingredient Bacon Wrapped Chicken
- 2 chicken breasts
- 4-6 slices bacon (depending on how large the breasts are), cut in half
- salt and pepper
- olive oil
Preheat oven to 350 F.
Lay a piece of saran wrap over your chicken breasts and then pound on them with a meat tenderizer until they’re as thin as you like them. The thinner they are, the faster they’ll cook. Sprinkle both sides of the chicken with the salt, pepper and rosemary.
Now for the good part! Wrap your ordinary chicken with the bacon slices to give you extraordinary chicken! That’s just the power of bacon folks. You can use as few or as many slices as you like. The more the better in my opinion. Lay a sheet of foil on a cookie sheet and then put your chicken breasts on it. Drizzle with a little olive oil and then bake for 30-40 minutes.
The bacon helps trap in some moisture so the chicken doesn’t dry out in the oven. Hope y’all enjoy!
