I somehow have an overabundance of potatoes and I’ve been trying to think of ways to use them aside from the usual mashed potatoes and baked potatoes. I came across a recipe for these and oh my gosh they are so darn good! It took everything I had not to make another tray of them! I think you’ll really enjoy them and it’s a great way to use up those extra potatoes. Give ’em a shot!
Cheesy Bacon Potato Slices
1 lg or 2 sm-med potatoes
3/4 cup shredded cheddar cheese (or any cheese of your choice)
salt and pepper
3 slices bacon, chopped (you can also use those bacon bits things)
Cayenne, to taste (optional)
Preheat oven to 375 F. Thinly slice your potatoes and then bring them to a boil in a covered pot of cold, salted water for 5 minutes. Put a piece of foil over a cookie sheet and lightly spray with olive oil spray. Arrange potato slices on the tray slightly overlapping. Spray with some more olive oil spray and then lightly sprinkle with cayenne to give them some zing. Sprinkle on cheese and bacon. Bake for 12-14 minutes.
Now try not to burn your tongue in your haste to gobble up these delicious treats! We’d already eaten half of the tray before I remembered that I better get some pictures! Hope you enjoy!
