Superb Chocolate Chip Cookies


These cookies are seriously SO good. If you want to be that mom who has some seriously kickin’ after school snacks for your kids or just a sweet treat for your man, these cookies are the way to go! We end up making them all the time, which is definitely not good for us, but it just feels so good to be bad with these! Haha! There’s nothing quite like fresh-baked cookies and these will definitely become your go-to option once you try them. I got this fabulous recipe from the hand-written recipe book my mom gave to me. The recipe makes a small batch, about a dozen cookies, but there’s a disclaimer written down to not double it. Personally, I haven’t tried it, but I just like having super small batches of cookies since I eat like 4 right when they come out of the oven (Woops!)

Chocolate Chip Cookies

  • 1/2 cup shortening
  • 1/4 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 tsp vanilla
  • 1 egg, beaten
  • 1 cup plus 2 tbsp flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt (if regular iodized salt or a slightly heaping 1/4 tsp of sea salt)
  • 1/2 pckg Hershey milk chocolate chips
  • 1/2 cup pecans, optional

Preheat oven to 375 F.

Cream shortening, sugar, brown sugar, and vanilla in large bowl. Fold in one well beaten egg. Mix dry ingredients together – flour, salt, baking soda – then add to wet ingredients. Stir in chocolate chips and pecans, if using. Form into approximately 1 1/2 inch diameter balls and press tops down slightly. This will ensure that the cookie will bake to be ooey gooey and oh-so-chewy and not too thin and crunchy. I very much dislike thin, crunchy cookies.

Bake for 9 minutes.


After the 9 minutes they will still look a bit underdone, but this is how you want them to be. This is the secret to the best, chewy cookies as they will finish baking once you take them out of the oven. Place them on a cooling rack.


The bottoms will look slightly browned like this.


After 5 minutes or so they will have “settled” a bit so they look flatter as they have finished baking.


The bottoms will have browned a bit more too.
