Skillet Fried Rice

I am a Chinese food fanatic and the rice is my absolute favorite part. This recipe is amazingly good and is the closest I have found to restaurant style fried rice.

Skillet Fried Rice

  • 3 cups cooked white rice (day old or leftover rice works best)
  • 3 tbsp canola oil
  • 1 cup frozen peas and carrots
  • 1 small onion, chopped
  • 2 cloves minced garlic
  • 2 eggs, slightly beaten
  • 1/4 cup soy sauce
  • 1/4 cup green onions
Heat canola oil over medium-high heat. Add the frozen peas and carrots, garlic and onion and saute until onion is translucent (if you like crunchy veggies, you don’t have to cook quite as long). Once veggies are cooked through, push them to the side and scramble the eggs. Next, add the rice, soy sauce and green onions and cook until heated through.
Then enjoy! If you want to make it a hearty meal, you can add some cooked chicken or beef at the same time as you add the veggies. I found this yummy recipe over at Blissful and Domestic.
